If you're looking for the ultimate summer salad, this one brings the crunch. We’re taking juicy watermelon and tossing it with pickles, pickled red onions, arugula, creamy feta, and fresh mint for a combination that tastes like summer in every bite. 

Watermelon Pickle Salad

A quick dressing made with pickle brine, lime juice, olive oil, and a drizzle of hot honey ties everything together with the perfect balance of sweet heat and briny goodness. It’s the kind of easy summer recipe that feels a little fancy without asking much from you. 

Recipe Instructions:

  1. Cut the watermelon into chunks and add to a large bowl.  
  2. Spoon in the pickles and pickled red onions. 
  3. Add the arugula and crumble feta cheese to the bowl. 
  4. Roughly tear the fresh mint leaves with your hands to top it off.  
  5. Make your dressing in a separate bowl. Whisk together the pickle brine, olive oil, lime juice, and honey until it’s smooth, glossy, and fully combined. 
  6. Pour the dressing over the salad and gently toss everything together. Go easy here so the watermelon and feta stay intact.
