
Ingredients
- 1 c Cheese Brothers Smoked Mozzarella, shredded (local pickup only!)
- 16 slices of the People’s Pickles Garlic Dill by Ricks Picks
- 1 TBSP Proper Pesto All Genovese by Olives Et Al
- A few slices of your fave deli meat
- 1 large leaf of Romaine lettuce
This is a pickle-centric sandwich that saw bread and said, “I can do better.” Instead of slices, you’ve got golden-baked pickle cheese sheets – crispy around the edges, melty in the middle and wrapped around layers of deli meat, romaine lettuce, and pickled red onions.
And just when you thought it couldn’t get more over-the-top? A drizzle of herby pesto takes it there. It’s equal parts crunchy, salty, creamy, and fresh. Think wrap meets grilled cheese meets charcuterie board – with garlic pickles in every bite!
Recipe Instructions:
- Preheat oven to 400 F and line a baking sheet with parchment paper.
- Press the pickle coins between two paper towels to remove excess moisture (no soggy cheese blankets here). If they’re thicker than ¼ inch, slice ‘em thinner.
- Sprinkle shredded mozzarella onto the sheet in two even rectangles. Layer garlic dill pickles over the cheese, then add another sprinkle to sandwich them in.
- Bake for 13 - 15 minutes or until golden brown. Remove baking sheet from the oven and wait a few minutes for the cheese to harden as it cools.
- Use one sheet as the base and stack on deli meat, pickled onions, romaine, and a good drizzle of pesto.
- Top with the second cheese sheet, slice it in half, and devour immediately – preferably with pickles on the side.
